Cauliflower "rice"

On my mission to find substitutions for my favourite carb dishes, I discovered pictures of Cauliflower "rice" on Instagram and it is a pretty great substitution. Like the spaghetti squash, it does NOT replace real delicious rice, but it comes pretty close. Cauliflower is low carb, low glycemic and has awesome nutritional benefits. It's also so easy to make and takes 10 minutes max.

How to make cauliflower rice with a food processor.

1) Cut up cauliflower into small even sized stalks.
2) Wash and dry.
3) Put them in your food processor. I used the Magic Bullet, using the cross blade. I don't really know if different blades make a difference. I noticed that when I didn't fill the container, it processed more evenly.
4) Process until cauliflower resembles rice.
5) Cook in a frying pan on medium with a bit of EVOO and seasoning for about 5 minutes. I used a bit of garlic chili sauce and black pepper.
6) Eat.

I told you it was simple. I don't even like cauliflower, I am more of a broccoli kind of girl myself but I loved this! It definitely satisfies the craving for rice, without the overload of carbs.
